Question
Hello :) I am planning to have a September wedding with my Fiance at a local campground. We will be renting a medium sized "Garden House" to have the food. It won't be a traditional sit down dinner. There are some tables, but most will be eating outside, or not at a table. It's more of a family style setting, and relaxed. We sent out 80 invitations. Maybe 75 will come. I was looking for help on which foods should be served, and how much to make? I don't have a huge budget, so that has to play a role. I would like to have nice food though, even though I can't provide a traditional sit-down meal. The other thing that falls into play is that my fiance is Jamaican, and he would like to have something that his family will enjoy. (and not snicker over having only "American food". They are not the nicest unfortunately.. I thank you very much for any advice you give. And apologize if this is something you have answered in the past. Thank you very much..

He apologized in a later note, and I'm not one to hold a grudge. Why don't you serve Jerk Pork?  It's a Jamaican dish and it's delicious and you can easily find recipes for it. Some pigeon peas and yellow rice would also make them happy--and would make for an unusual dining experience for your American guests.
Do a search for Jamaican recipes at Google and you will be amazed at the great food you can find there.  Serve Red Stripe beer and you will be the belle of the ball and the favored daughter-in-law.
