Question
I am having a dinner party tomorrow night, Jan. 17,'09. Am serving Chicken Cordon Bleu. My agenda is cocktails at 5 dinner at 6pm. How do I keep chicken warm without it drying out? Since I am single I do not want to be in the kitchen while guests are here.
Your best solution is to put into the oven to cook during cocktail hour. I always cook my entrees during the cocktail hour so that I can serve a fresh and piping hot entree to my guests. You can also hire a server to help you. Neighborhood teens make especially good wait staff.
