Question
I am going to do a wedding reception for 250 people. The bride wants a buffet with chicken tenders, cocktail meatballs, shrimp cocktail, small chicken salad croissant sandwiches, 7-layer salad, pasta salad, vegetable tray, fruit and cheese kabobs, and rolls. She is also going to have a table set for guest arriving before the bride and groom get there with cheeseball and crackers, ham and turkey pinwheels and punch. I'm not sure about how much shrimp compared to the other meat.

Answer
Figure 5 pieces of shrimp per person depending on the size of the shrimp. I do a lot of shrimp for weddings (I'm a wedding planner) and if you serve peel-and-eat you will need less of it and it will save your bride some money LOL although that's probably not your primary concern if you are a professional caterer.  If you are not, then it's a good budget hint. The snack table is a good idea as the photographer will be taking pix for a while after the ceremony.
