Question
hi Terri,

I was asked by a friend to cater her dinner for 60 to showcase her new jewelry business.  She's asked for meat lasagna and chicken parmigiana and garlic bread.  To be honest, I cook large for my family (we're Sicilian!), but I really don't know how to be accurate in planning portions.  I don't want to do too much or too little. Can you help me to calculate what I will need to make this right for her?  Thank you so much!

Answer
Each 14x22 inch pan will provide 9 servings, if I were you, I would go to Costco or Sam's and buy 7 pans of frozen Stouffer's meat lasagne, cook it with some extra cheese on top and no one will be the wiser--don't think that I haven't tried both ways and NO one knew the difference so why kill yourself? For the $70 or so it's cheaper, easier and just about as good as homemade.  I'd do the same thing with the chicken parm, no one will know the difference. I loaf of bread for every 6 people, so 10 loaves of French  bread, 10 sticks of butter, 10 tsps of garlic powder.  Go nuts.
