I am making lasagna for approx. 175 people, the wedding is dec. 23rd. how soon should i start making it, and do i cook it first before i freeze it and how long can i freeze it for.FXY

Answer
Do not cook before freezing. You will need to thaw it before cooking or it will take twice as long to cook. You will need 8-10 ovens and if you don't have commercial cooking facilities, it's going to be a fiasco. You can freeze for up to 3 months. If I were you, I'd go BUY 20 of the Stouffer party size lasagnes for $10 each and add some extra mozzarella on top. No one will know the difference, it will cost MUCH less than making it from scratch and you'll be much better off. Thaw it before you cook it or it will take twice as long.
