Question
I'm helping host an open house for approx. 40 folks.  Part of what I want to contribute would be cocktail meatballs, cheese and crackers, veggie trays.  I've read your rules of catering but 6-8 appetizer bites would mean 240 meatballs and I'm really unsure as to veggie trays and cheese and crackers, can you help?  Thanks much.

Do this:
Get a BIG hotel pan and fill it with the frozen meatballs you can buy at Sam's or Costco--they're already cooked and dirt cheap. Mrs. DiFilipo is a good brand. Go to any Chinese place and buy 3 quarts or so of sweet and sour sauce--about $3 a quart maybe less.  Pour it over the meatballs, stir them around and cover with foil.  Put them in the oven at 225 for 4-5 hours and then serve them warm.  People will FIGHT over theses.
