How much chicken soup should be made to serve 100 people with each person also getting 2 matzo balls with the soup - this is the appetizer for a full meal.

What is the serving size of meat per person and how much should be prepared to feed 100 people brisket.

Answer
6 oz of soup with two golf ball size matzo balls per person should be just about right.

For brisket, a 7 oz (after cooking) per person portion is the correct size. You will need to prepare about 65 pounds (precooked weight) of brisket since it shrinks badly on cooking.
