Cooking for Parties/Catering for Weddings

Question
Hi there,
I have 125 confirmed guests for my wedding reception. We're doing a buffet style dinner in a ballroom. How many should I really tell my caterer we're having? I'm a bride on a budget and don't want tons of food leftover!

Thanks,
Mara

Answer
There are always a few last minute extras as well as a few no-shows so I'd go with the number of confirmed guests to give to the caterer as the number attending.  A good caterer will always have a little extra food and you will also want to ask them about their leftovers policy--do you get to keep them or do they go back with the caterer?  If you get to keep them, they can be frozen for quick meals for you and your husband during the hectic first months of marriage. If the caterer takes them back, I'd ask why--who would they serve it to?
