Question
What is the best way to keep chicken warm for an open house graduation party?  The food will be left out for about 4 hours and I don't want the chicken to dry out. I was planning fried chicken and baked.

Answer
You should not hold chicken this long--2 hours is the max.  There's no way to hold it for 4 hours at serving temperature (which it needs to be to avoid food poisoning) and keep it from drying out.  Your best bet is to either make 2 batches and put the second one out after 2 hours--or pull the buffet offline and put leftovers in the fridge and offer to reheat for latecomers.
