Question
Hello!  I've got an April 26th Rehearsal Party coming up and we've got 6 tables of 20 and 4 tables of 10.  Total is 160 people.  My partner and I are doing the food and then a caterer is available to prepare that day- get things out and clean up.  We are within six weeks of the wedding and today made our first 11 lasagnas (1/2 pan).  We are assembling, cooking, and then freezing.  We expect to need two lasagnas per table of 10 and three per table of 20.  Then salads, meatballs (we've just made 1300 of them on Monday, currently frozen NOT in sauce), bread, and wine.
Can you let me know if you think this plan will work?  How do the quantities sound, How about the amount of freezer time?  Thank you so much for your help, we really appreciate professional advice,

You're in serious trouble unless you have a whole lot of oven space. How in the world do you think you are going to be able to cook off all this frozen lasagne when it takes about 90-120 minutes to cook a pan of frozen lasagne and 45-60 if it's thawed?
