I'm helping with a party for 350.  The Guest of Honor wants to serve petite parfaits in 2 oz acrylic cups.  We are doing this from scratch and don't know where to begin.  Questions are: How much preparation time should we need? Must they be kept cold?  Is can pudding and whipped topping enough?

Answer
Yes, it will have to be refrigerated so that you don't have 350 cases of food poisoning. Now for the serious part: If you think that you can pass off canned pudding and Cool Whip as yummy party food to someone who can afford a catered party for 350 and the guests that such a person will have, you have a recipe for disaster. You will have 350 people embarassed for their guest of honor and a GOH who will be enraged that you served elementary school cafeteria cuisine at his party. You will then have 350 people making snarky remarks about being served "crap in a cup" passed off as a "parfait" by what they will describe as the world's worst caterer and you will be on your way to being out of business as a caterer. 350 people will tell 11 people each so that's 3850 people who if they tell 3 people each is 11,550 people of the echeloin that still hires caterers and you will be well on your way to being out of business which will probably be better than being the punchline of bad caterer jokes.
