Could you tell me please how much cheese and ham cubes I need to buy for appetizers to serve before a wedding reception. a dinner is being served but people will arrive at the hall right after the service about an hour prior to dinner being served.We want to do cheese and ham cubes.Should we provide crackers also?

It depends on how many people and how long you are planning to serve them and what time of day it is taking place, none of which you provided in your inquiry. With the limited information I have to work with, I would say 5-6 bites per person per hour and yes you should have crackers.
