QUESTION: Hi Teri sorry you thought I was asking a question for hmwk.
I am a personal chef for hire in virginia beach my company is water 2 wine, I am doing a venue for 300 people and I got stumped on weither or not I should do 1 piece of fruit per person since the apples and bananas were not going to be cut in half. But the organges are going to be quartered. so I figured 100 apples, 100 bananas, 100 oranges. they will also be having an assortment of danishes and muffins. So with that being said, now that I have you on here perhaps you could also give me your opinion on if I really need 100 of each piece of fruit. If not how many lbs of each would you suggestand once agin if I do how many pounds of each do I need you think?
ANSWER: I'd go with a fruit salad personally because it's so much easier and simpler to portion and less waste. You will need about 6 ounces per serving to go with your baked good.

QUESTION: They want whole fruits so can't do fruit salad. How many lbs. of fruit or cases of fruit for each. Thanks Arika
Oh crap! There's so much waste with whole fruit. Do one banana or apple per person--and be prepared to peel a lot of apples for pies to freeze and make a lot of banana bread for the freezer! People like prepared food, not whole fruit--wait and see. Let the bananas get REALLY ripe for the banana bread and you can also let them get super ripe and them peel them and freeze the chunks for outstanding frozen banana daiquiris!
