Hello. My family is having a get-together this weekend and I signed up for potato salad. Now I know that not everyone will be eating the potato salad but so far there are between 80-100 people. I have never made this large of a batch. I bought twenty pounds of potatoes, 3 jars of mayonnasie(?), 2 jars of mustard, and a jar of sweet relish. The reunion is Saturday so if you can reply me soon, I would appreciate it. Thank you.
Add 2 dozen hard boiled chopped eggs and you should have plenty! Figure about 4 oz per person so for 100 people 25 pounds of potato salad is the right amount. Be careful to keep it chilled! You don't say what size mayo and mustard jars you purchased so keep in mind that you can add more but you can't get it out.
