Hello!  I found a letter from a woman to Teri re: a party of about 60.  My daughter's graduation party is closing in and I would like to get a recipe for a pasta salad that holds up well (we did rent a "cold" table so it will be kept cool during the 4.5 hour party.  Teri's response suggested a german potato salad recipe that is allegedly delicious and if doubled would serve about 60.  It got me interested in that recipe too.  Because Teri asked Jennifer to contact her directly, the recipes were not given.  Any help on this would be greatly appreciated. The pasta recipe I gave out wasn't for pasta salad, but I have a pretty good one if you want it.  Here's the German potato salad recipe and it's REALLY good.  Very balanced--not too tart, onion-y or sweet and there's never a bite left!


GERMAN POTATO SALAD

6 pounds red or white creamer potatoes
2 pounds bacon, diced and fried crisp
2 cups white vinegar
2 cups water
2 tsp salt
1 tsp Accent
1 tsp pepper
1 box (16 oz) 10X powdered sugar
2 large (baseball to softball size) onions, chopped

Cut potatoes and boil till tender. After frying bacon, remove and set aside.
In the bacon drippings add the onions and fry them in the hot drippings until
they separate and begin to soften, about 3 minutes. Add water, sugar and
seasonings and bring to a full rolling boil while stirring, then remove from
heat. Drain potatoes and pour dressing over. Stir potato salad up from the
bottom smashing the pieces a bit to aid in the thickening of the dressing. Stir
in the reserved bacon pieces and let sit on the counter for 4 hours before
serving or chill overnight in the fridge and reheat before serving.
