Question
I am going to prepare two of the salads for my son's wedding reception.  In addition, a caterer is providing a fruit salad, fruit and vegetable display, Antipasto layered cheese spread, and crescent rolls.  The salads that I am preparing are a pasta salad and a Chinese Chicken Salad.  I have recipes for both, but they are recipes that will serve about 6 - 8 people.  Can I just multiply the recipe until it has sufficient quantities for 200 guests or is it more complicated than that?  Also, with the other food that is being provided how much of the pasta salad and chicken salad should I plan on people eating?

Answer
Figure 4 oz of each per person.  It's exactly as simple as multiplication--you'd be amazed at the number of requests I get to 'upsize' a recipe that is sent to me.  It makes me wonder about the quality of education these days!  You are the first person in a long time who realized this in advance LOL you must be my age!! <wink>
