Making potato casserole for 250. Using your guidelines I will need about 90lbs total. If I add up the weights of the initial ingredients does that work.
Each roaster will yield about 30 pounds total(18lbs of potatoes plus other ingredients = 30 pounds).
We are feeding a deploying group of MP's and Brass at an Army Base and just want to make sure I have enough.
You need about 6-8 ounces of potato casserole per person as it will be popular and your eaters are young men who both like potatoes and eat a lot of food. I'd really need to see your recipe to tell you how many it will serve but I think that you are right on the money. Just remember young men eat a LOT so you may need more--you aren't feeding anorexic teenage girls!
