Question
WE will be serving cut up watermelon, strawberries, cantaloupe and grapes together in a fresh fruit bowl buffet style. How many of each do we need to buy to serve approx 250 people?

Answer
You will need about 6 ounces of fruit salad per serving.  I don't have the recipe so I can't see the proportion of each fruit, but if you are doing equal parts of each then you will need 1.5 ounces of each fruit per serving to equal the 6 ounces, so it's a simple math equation from there--and make the fruit salad as close to the serving time as possible, strawberries and watermelon don't hold up well after cutting so you don't want to try and hold them overnight.  It's also important to keep them cold while they are on the buffet.  Some fresh mint chiffonade would add color and flavor--as would a splash of some sort of liqueur such as amaretto.
