I am catering a wedding reception for 350 people to help a friend.  I am having trouble deciding the quantities of each item that I'm serving.  The wedding is at 2:00 on a Saturday in August at the church - no dinner or other activities follow the reception.  Could you please look at the menu and help me decide on quantities?   (I'm okay with the drinks.)
Menu:
Pastry puffs with chicken salad
Ham pinwheels
Turkey sandwiches (3-bite size)
Cheese ball
Vegetable tray - broccoli, cauliflower, carrots, tomatoes
(with dip)
Fruit salad - watermelon, cantaloupe, honeydew, grapes,
             strawberries   (with dip)
Mints
Nuts
