Question
My son is getting married in Sept.  I am going to do the food myself.  I want to have rigatoni and meatballs w/salad and dinner rolls.  I am also doing bbq beef, ham and cheese trays and a pasta salad.  We have invited 300 people (I know they won't all attend, no rsvp's).  I need to know app. how much pasta I need to cook for 300.  I am doing 80 lbs. of beef, two hams and 10 lbs. of pasta salad.
(I am sure of these portions because I used the same amounts for my daughters weddings.)  Also, can I cook the pasta the day before and put in sealed bags with a little oil so that it doesn't stick?  Can you also give me your recipe for pasta salad?  I read the questions page but did not see it.

You will need 3 oz of uncooked pasta per person. Pasta does NOT hold well overnight, there's a saying in cooking--the sauce will wait for the pasta but the pasta won't wait for the sauce.  I wouldn't do this if I were you.  I'll be glad to give you my recipe for pasta salad, it's rather simple. Make a batch of Good Seasons Italian dressing using a decent extra virgin olive oil and red wine vinegar.  Whisk in enough mayonnaise to give it the thickness of pancake batter and mix it with cold pasta.  Serve immediately as you will have to redress it if you hold it longer than 5 hours--pasta sucks up dressing like a sponge.
