Question
we will have 250 guests.  we are wanting to serve seafood fettucine/rice dressing/corn/rolls as main food then veggies & fruit as appetizers.   any suggestions?

Answer
You never serve rice, pasta and corn which are all grains in the same meal--and you are adding bread to this all starch meal.  This is a very poorly thought out meal and will be heavy and unappetizing to look at--everything is white except the corn (which is not a veggie, it's a starchy grain) and it's yellow and everything has the same texture. UGH!
Start over--1 entree, 1 veggie, 1 starch side, salad and bread. Vary the colors and textures--something soft, crunchy, sweet, tart, etc. and you'll have a much better menu. I'm amazed your caterer let you pick these as it reflects on them!
