Question
I am catering a wedding for 100 people. I am serving Chicken Cordon Bleu, Baked Haddock and Cannelloni for the main dishes.  I am using 13"x21" chaffing dishes. I plan on making a single layer of each main dish in a pan.  How many chaffing dishes should I make of each main dish to feed 100 people?  I am also serving Rice Pilaf, Mixed Vegetables, Salad and Rolls.  We are also serving appetizers before dinner.

I'm assuming this is your first catering job? You have 3 problems that are preventing me from answering your question and they are going to cause you to lose money because you are going to have a ton of waste. 1. You do not have any idea who is going to eat which entree which is your number one problem. 2. You don't know what size portions you should be serving. 3. You are serving too many entree dishes.
