Hello,
We are having an outdoor party for 100-ish people (about 60 adults, 40 kids). We are serving 2 kids of chicken ( a chicken salad and another boneless chicken dish) as well as hotdogs, pasta salad, green salad and bread. How many pounds of boneless chicken should we use for each chicken dish?

It depends on how much of each chicken dish you want to make which is contingent on how much of each chicken dish you wish to serve.  Without this information, this is an impossible equation.
However, I would not make two chicken dishes since without knowing the tastes of your guests, you will invariable have way too much of one and not nearly enough of the other because of a silent guest named Murphy and his laws.  I'd make one chicken dish for everyone and plan on 7 ounces of the finished dish per person. Not have been furnished with the recipe, I can't tell you how much chicken that will require.
