we are planning a 6PM wedding, reception dinner at 7:15.I need to know amount of meat/food needed, we are serving :
sweet and sour meatballs,
2 perogies variety,
lazy cabbage rolls,
mashed potatoes,
hot mixed veggies,
dinner rolls


Without knowing the size/weight of the meatball, pirogues and cabbage rolls, I am not able to answer your question.
General rule of catering:

Per person you will need
3 appetizer bites per hour per person
7 oz of entrée
3 oz EACH side dish
2 oz salad greens
1 oz salad dressing
1.5 rolls
18 oz of non-alcoholic beverage
1 dessert serving.
