Question
Hello, I am an owner of a 1.75 mil sales casual restaurant. My business partner and I started from nothing and we are currently in the process of opening a new place. I am having trouble finding any salary structure for hiring an executive chef, since I have been the exec. chef at the current restaurant we have never had to hire one.

Is there some form of formula I should be using? I would like to set up some sort of bonus structure for the chef based on sales and cost control. Do you have ant ideas?

Answer
There is no formula. You need to call around and find out what the prevailing wage is for the position in your area among similar concepts. The industry trend is also toward lower base salaries and higher bonuses.

Sales are not a good criteria for bonusing a C.E.C. unless he has some ability to drive them via his celebrity, awards, notoriety, etc... and should be commensurate with same.

Total Management salaries though should not exceed 10% of sales.
