About Ginger Moreno
Expertise
I can answer most questions regarding Latin American/Spanish recipes (and if I don`t know the answer I have many cookbooks that will probably contain the answer.) Several of my recipes appeared on the Food Network. I love to work on my original recipes - and make the tried and true. I am really passionate about learning different ethnic cuisines and I treasure all of the grandmothers out there who have recipes that have been handed down from generation to generation.

Experience
Past/Present clients:I have catered for several gymnastics clubs. I teach cooking classes for 4-H, for a facility for the elderly, for a women's club monthly meeting, and the latest is at a supermarket showing people who sign up for the cooking class how easy good cooking can be.

Cooking & Restaurant Management - How to tell if your meat is freezer burned

Expert: Ginger Moreno - 1/18/2009

Question
I am a 61 years old and I do not now how to tell if my meat is freezer burned.

Answer
Hi Regina:
Sorry it took me a few days to answer - however, we went out of town for a couple of days.

Regarding your question - usually freezer burn shows up on meat like white patches around the edges or tops of the meat.  What has happened is that the oxygen mixed with the air temperature form ice crystals which damage the meat and its flavor.   It looks unappetizing and if you DO cook it the meat is the consistency of cardboard.

I have tried out a new thing recently - Reynolds makes plastic baga which have a hole where you attach a small machine (sold with the bags)and you suck the air out of the bag.  I have only been using these for about 2 months - however, everything that I have placed in the bags has come out like the day I placed it in the freezer - so try these!

Good luck - and if you need more help in this area, by all means let me know.
