Cooking & Restaurant Management/Malanga Lila from Latin America

Mrs Moreno

I am using a tropical tuber called : Malanga Lila
I make a Fritter with it, unfortunately i am not able to obtain the taste of the Malanga lila.
I am looking for a way to enhance the taste of the Malanga Lila, what ingredients are able to enhance the taste of the Malanga Lila.

Thank you

My mother and grandmother would place 4 or 5 cloves of garlic in the olive oil and let them come to a point before frying - then they (as I)would remove the garlic and put in the malanga rounds and fry them until you see them getting brown - then remove from the oil and place on top of paper towels and immediately after sprinkle with kosher salt.

This should help.

Take care.

I can answer most questions regarding Latin American/Spanish recipes (and if I don`t know the answer I have many cookbooks that will probably contain the answer.) Several of my recipes appeared on the Food Network. I love to work on my original recipes - and make the tried and true. I am really passionate about learning different ethnic cuisines and I treasure all of the grandmothers out there who have recipes that have been handed down from generation to generation.

Past/Present clients:I have catered for several gymnastics clubs. I taught cooking classes for 4-H, for a facility for the elderly, for a women's club monthly meeting, and at a supermarket showing people who sign up for cooking class how easy good cooking can be.

Self taught cook - had a great family who passed down recipes.
