Can you please tell me what is the maximum amount of US dollars I can legally take out of the US and put in a bank in Croatia at a time?

As far as I know there is no limitation on the money transfers to Croatia from abroad. In fact the government is trying its outmost to stimulate influx of foreign capital into Croatia.
If you already have a bank account in Croatian bank I suggest you contact them directly for more detailed information. If not here are some web sites of banks that operate in Croatia:
