What does this (chain-1 space) mean relating to the following crochet hat pattern?

Chain 50.
Row 1 (right side): Single crochet in 2nd chain from hook, *chain 1, skip next chain; sc in next chain, repeat from * 24 times, turn — 25 single crochet, 24 chain-1 spaces.

Row 2: Chain 1, single crochet in first single crochet, single crochet in next chain-1 space, *chain 1, skip next single crochet, single crochet in next chain-1 space; repeat from * across to last single crochet; single crochet in last single crochet, turn.

Thanks for the question.

In row 1 the instructions state to do a chain 1, skip next chain....

For the next row, you are doing the stitch on that chain 1 space.

The last part of the row, is used as a check - to make sure you have the right amount of stitches for that row. (in the case of row 1, you should have 25 sc, and 24 ch-1 space) this helps to make sure you are doing the stitches correct,
