Question
I finished a project on 14-count Aida.  The pattern called for 2 strands of thread.  I can too many white spaces.  Should I have used three strands instead of 2?

When you stitch using 2 strands of thread, you will see some of the fabric showing through.  If you used 3, chances are that you won't see as much, if any, of the fabric showing through.  Also, when using 3 strands of thread, it may become harder for the needle to go through the holes because of the bulk of thread.

I mainly use 2 strands of thread when stitching, and don't mind having the fabric show through.  It's a matter of personal preference.
