Question
I finally figured out how to determine the 11,14,18 count, but i'm working on a design that says it was stitched over two fabric threads on 14 count. two threads for cross stitch and one for backstitch. what does the over two fabric mean? I've been doing the stitches in the small boxes, am i right or wron?

Over 2 of the fabric threads on 11, 14, or 18 count fabric would be extremely large in my opinion.  They may be referring to over 2 fabric threads on an evenweave fabric (ie. 22, 24, 26, 28 counts, etc.).

Continue doing what you're doing.  When you become more familiar with stitching, then you can try stitching over 2 fabric threads on an evenweave fabric.  It does take some getting used to, and in the beginning you'll need to stitch slowly.  It's fun, and the results will be beautiful.
