Experience I had a Cowboys webpage recognized around the Internet as the authoritative list of Cowboys links, and I have a Cowboys book collection second to none (200 titles). In addition to my book collection, I have every Cowboys media guide back to 1960, which makes researching questions much easier.

I don't have the song and I don't think I've heard it, but a google search led to a post by a guy named Jerry Jungmann who says the name of the song is "Sunday Cowboy":

I have a "collectable", somewhere in the confines of a closet, that I doubt any of you guys remember - a 45 entitled "Sunday Cowboy". It's a country song from circa 1980. The lyrics include lines like "I like to see Ed Jones break the other teams bones"... "just give me a chance to see Tony D. dance"... "when Randy White puts out Ron Jaworski's lights"... "when Everson Walls gets his hands on the ball"... "it even makes ole Tom Landry smile". There are references to other players including Danny White and Rafael Septien, but I only recall the above fragmented lyrics. The culminating verse, however, is "the Super Bowl ain't the Super Bowl, if the Dallas Cowboys aren't there.
Ah, those were the days - when music was music - none of that sissy Wham stuff ;-)
