The one you're thinking of is from Dave Matthews and Tim Reynolds Album "Live at Luther College." Tim Reynolds does a lot of guitar work on all of the songs on the album (except Granny) that could be described as "extremely complicated."
There is also a studio version of the song out there somewhere (I think it's on the compilation titled "Platinum Christmas," but if I recall correctly its just Dave solo on the guitar with some drums and bass near the end.
