The s at the end of a name is often added to an existing word to make it plural or possessive, so a good way to find the meaning of a name that ends with an s is to search without the s.

Apart from the references to names mentioned by Hilde, the word borger is also another word for guarantor, and also the name of a type of potato, that is in Dutch also known as Eigenheimer, which is a somewhat floury type of potato.
