Answer
An incubator can be used in many ways, for many purposes. As the number of functions increase, an embedded processor becomes more important. Most incubators will control temperature - others control oxygen, CO2 levels. Some will control the amount of light, some provide shaking.

An incubator that maintains only temperature is easily controlled with just a thermostat. But if temperature needs to vary, or other parameters need to be controlled, an embedded processor or an attached computer makes these things easier.
