Question
Must I pay a probationary employee for one day, her last day before she walked out, left without notice or explanation?

Answer
If she performed any work on that day, then yes, you must pay her at least for the time worked.  There is nothing in the law to condition an employee's right to be paid upon giving any sort of notice of quitting.  I assume this person was "non-exempt", i.e., paid on an hourly basis.  However, if she was an exempt salaried employee she must be paid for the entire day regardless of how much time she actually worked, provided she did actually perform some work that day.
