This insect or bug is appearing on our kitchen counter in the mornings for the last 5 or 6 days. What is it and how do we get rid of it?

This is a beetle, likely one of two closely related species, either the cigarette beetle or the drugstore beetle (see http://www.livingwithbugs.com/cigarette_drugstore_beetle.html for images). Both infest stored food so the best treatment is to locate and dispose of the infested foodstuff, then clean and treat the area. See the page cited above for specifics.
