Excel/Time log

I work in Dispatch for a concrete company and am trying desperately to come up with a spreadsheet I can use that can help me keep track of orders with a graph so myself and my coworkers don't keep overbooking like we have been. Is there a way for us to enter in the date, batch time, site time, and plant time in such a way that each address shows when we should batch when the driver should be on site, and when the driver should be back?

There's quite a lot of information I would need beyond what you mentioned, including definitions (what's batch time & site time & plant time, for example, and how does that figure into the information you want? And what would the graph be charting?)
Also, this seems like a small project, not a simple Excel question, and would require more time than I'm able to afford gratis.
