Fish & Seafood - Question

Expert: Greg Shreenan - 10/3/2008

Question
I wanna know the difference between a swordfish and a yellow tail. It's important.

Thank you very much
Stojan

Answer
Stojan,

Thanks for allowing me to answer your question.  The swordfish is a pelagic fish in that it has only a backbone and no other bones.  It has skin with no scales and it is much larger than a yellowtail with adults weighing as much as 300-400 lbs.

The yellowtail has scales and a skeleton and the meat is a darker color.  IT is generally much smaller with adults weighing about 20-40 lbs with some in the 60lb range.

Swordfish has white meat and is served as steaks and yellowtail is served as a fillet.

I hope this helps

Your friend, the fish guy,

Geg
