Question
going about adding a sweet flavor that would mix well with the flavor of the following fish:
                                 salmon, orange roughy, mahi mahi, red snapper, and gold banded snapper. since im only at most almost intermediate with my cooking skill try to keep your suggestions simple if they're recipes, since as i said im only just about intermediate. also, what types of fruit juice, if any, would you recommend trying on the fish i mentioned? me, i've tried pineapple, orange, and cran-grape on all the fish mentioned, and they all tasted reasonably good, but i was wondering if there was perhaps something better i could try. well so, when this gets to you and you're able send a reply. Dear Manuel,

Your question has me a little stumped. The fish you mentioned vary a lot in type from very mild to heartier and oilier, so their flavors are very different from each other. For heartier fish like salmon and mahi mahi, the best sweetener I know is onion in some form, which sweetens when cooked, or when raw in a salsa in the case of red or sweet onion.

I'm not a fan of very sweet flavors with fish, and of the fruit juices the only kind I've had with fish are citrus fruits like lemon, lime and orange, which are all great with fish. One good way to find recipes for a specific fish with a specific juice might be at www.epicurious.com. In the search box at the upper right, type them in, for example:

snapper lime


Another way is to use www.google.com with the word "recipe" added, such as:

recipe mahi mahi orange

or

recipe salmon "red onion"
