QuestionDear expert.
My name is Pardis Jasem.
I am studding Fisheries in Egypt University.
We have some kind of oily sardines in our coastal area.
I am interested to be advised,how can I make the whiter color from the fish paste of oily fish like,
( Anchovy - Sardine - Macrell ),which they have dark color mussels,during the washing fish paste with adding the chemicals.
I would be pleased if you can assist me.

To prepare this Anchovy Paste Recipe, first take a dozen anchovies, scrape them clean, raise the flesh from the bones, and pound them most thoroughly in a mortar; then press them through a fine sieve. Add the same weight of butter melted, but not hot. The less butter used the stronger will be the flavor of the anchovies. Time, about half an hour.

ANCHOVY PASTE
1 small bottle or can anchovies
1 egg yolk
1/4 c. pecan nuts, chopped fine
1 teaspoon Tabasco sauce
1 tablespoon mayonnaise
In a blender, chop the pecans and then add remaining ingredients.
Serve on hot buttered toast rounds or wheat crackers.

Sardine Paste Sandwich Filling
You could try using whole sardines in this recipe, including the bones, which are soft enough to incorporate and are a good source of calcium
Ingredients
125g can sardine in oil, drained
75g cream cheese
1/4 teaspoon finely grated lemon zest
15ml (1 tablespoon) lemon juice
1 crushed garlic clove
salt and black pepper to taste
lemon wedges to garnish
Utensils
chopping board
vegetable knife
mixing bowl
small basin
wooden spoon
grater
tablespoon
lemon squeezer
fork
Method Beat the cream cheese with a wooden spoon in the mixing bowl until smooth. In a separate basin, mash the sardines thoroughly with a fork.
Combine the sardines with the cream cheese then add the lemon zest and juice, the garlic and salt and pepper. Mix thoroughly.
Spread on sandwiches.
Tip
Try using smoked mackerel instead of the sardines.
