Food Safety Issues - string cheese storage

Expert: Carl Copeland - 1/16/2008

Question
I mailed a "care package" to my son at college and put some string cheese in it.  The cheese was packaged in bulk, several pieces of cheese in one vacuum-sealed package.  The problem is that I sent it out on January 3rd from WI and he didn't receive it until January 15th in MA.  My question is, is it safe for him to consume the string cheese?  Thank you!

Answer
Linda,

I am sorry for the delay in my response. String cheese is not like a hard cheese which can withstand not being refrigerated over a period of time. I would tell your son to pass on the cheese and enjoy the other goodies. I have a son in college and they'll eat anything.
