Food Safety Issues - Discoloration Inside Canned Tomato Product

Expert: Chris Manley - 11/16/2008

Question
After opening two tomato puree cans, I notice a black color on some areas about 1/2 to 1 inch below the rim of the inside of both cans.  When I rubbed the areas with my finger, some of the black color came off and had a metalic odor.  I hesitate to eat the sauce I made in fear it is not safe.  I can't remember ever noticing this in the past.  Can you tell me what this might be and if it is safe to consume?  Thank you.

Answer
Any discoloration, or off odor inside a canned product should be a reason to not use the product.

The black discoloration you describe sounds like it may have been caused by the can oxidizing or reacting in some way to its ingredients.  While ir may be harmless, it is advisable to discard this product.
