Food Safety Issues - refreezing pineapple juice

Expert: Chris Manley - 12/10/2008

Question
I recently had a piano recital where I served punch consisting of frozen (canned) pineapple juice and Cheerwine. The juice has to be partially thawed to serve. I had 3 cans of the juice leftover and I was wondering if I can refreeze the unopened juice for punch later?

Answer
If the cans were left unopened, and only were partially thawed, there is no reason why the juice cannot be refrozen. The pineapple juice is likely to be too acidic to support growth of bacteria, though if the cans were opened and placed in another container there is a chance the juice could become contaminated.
