Food Safety Issues - Unrefrigerated tomato sauce

Expert: Carl Copeland - 3/25/2008

Question
I made a batch of tomato sauce (no meat) and then put it into open glass jars to cool.  Unfortunately by the time I remembered them the next morning 10 hours had passed.  Is the sauce safe if reheated?  I saw a similar question posted, but that question referred to meat sauce, so didn't know if the answer was the same.

Answer
Lisa,

How are you doing?  I apologize for the delay in my response.  I never tell anyone to throw food away as it is their decision. Most foods should be refrigerated within 2 hours of cooking, 10 hours is a long time but what was the temperature in the room it was left in?  If it was about 40 degrees Fahrenheit or below everything should be alright. Leaving food out causes bacteria to grow but not always to the poing of being harmful. I myself would probably use the sauce but the choice is yours.
