Question
I was interested in slicing my own deli meat but I would like to know how long unsliced slab of meat is good for after opened and started.How and where should unsliced cold cuts be stored between slicing? Do I need to store in zip lock or Tupperware in between slicing? Can I store uncut portions in freezer? What meats last longest and shortest?

Answer
If the product is stored at 41 degrees or below it will remain safe longer than signs of spoilage start to appear. In other words, the meat will begin to tste and look bad long before it becomes unsafe.  Th unused portion should be wrapped in plastic or put in airtight containers between uses.  Uncut portions can be frozen and later thawed, some changes in texture and quality of the food may occur. Cured and smoked meats will be the longest lasting in terms of quality, however all deli meats should last 1-2 weeks after opening.
