Food Safety Issues - cooked casserole left out all night?

Expert: Carl Copeland - 4/11/2008

Question
I cooked 2 egg and cheese casseroles at 10pm but set them out to cool and forgot to put it in the fridge over night.  I woke up at 5:30am in a panic and put the casseroles away.  I assume these are now in the dander zone and should not be served?

Answer
Jodi,

How are you doing today? Fine I hope.
Most foods after being cooked should be refrigerated within 2 hours.
It also depends on the temperature of the room that they were stored i. 40 degrees Fahrenheit or lower is the idea temperature. In reference to throwing food away that is ultimately your decision.
