Subject: baby back ribs
Question I purchased baby back ribs, frozen, 10 days ago. They have been in a walk-in cooler at 35 degrees since. I checked in on them yesterday and they are completeley thawed and I put them in the freezer. Is it safe to say that these ribs are a goner?
Answer Hi Amanda,
The recommendation is that fully defrosted meat should be cooked or refrozen with 3-4 days of defrost. Since you say the ribs were purchased frozen and put into a walk-in cooler, I suspect that the ribs were fully defrosted within 2 days. With the assumption, that means the ribs should have been cooked by day 6 after placing them in the cooler.
Since your ribs were at least 4 days past the recommended refrigerator storage time, the recommendation is to not consume the ribs.
