Food Safety Issues - flank steak "use by" date

Expert: Chris Manley - 5/1/2008

Question
Hi-
I bought some flank steak from the butcher at the supermarket on April 27.  I was planning on using it in a stir fry tonight, but realized that the "use by" date was April 30.  Is it still safe?

Answer
I apologize for responding to your question well after any usefulness to the situation you asked about.  In general, "Use By" dates are intended as a way to ensure the product is used within a short period of time where quality is at or near its peak.  Use after those dates does not make the product unsafe in most cases, but more than likely the product will have degraded somewhat in quality.
