Food Safety Issues - Filet Mignon

Expert: Chris Manley - 7/16/2008

Question
I have a couple pieces of fillet mignon and they've been thawed in my fridge for about 2 weeks. Generally I never keep uncooked meats past 2-3 days but this is vacuum sealed (and a very yummy cut of meat) What do you think? Should I chance it? Thanx

Answer
If cooked correctly it will be fine.  Beef in particular actually can benefit from being aged at refrigerator temperatures to allow for some loss of moisture in the meat.  The vacuum sealed steaks probably won't get that benefit but should be safe to eat.
